Cracked New Potatoes



This Cypriot dish is generally served as part of a meze. The recipe  is devised from the Greek Cypriot word antinasso which means 'toss'!


Serves 4-6

  • 2 lb (900 g) new potatoes

  • 1 cup vegetable oil

  • 1/2 cup dry red wine

  • 1/4 cup crushed coriander roots

  • salt, pepper

  • flat-leaf parsley or coriander leaves to garnish

  1. Wash the potatoes and dry with a cloth.

  2. Hit each one with an implement to break slightly.

  3. Heat the oil until hot in a frying pan and stir fry the potatoes until evenly browned.

  4. Drain off most of the oil, reheat and add the wine, salt, pepper and coriander.

  5. Reduce the heat and simmer gently with the lid on for 15-20 minutes.

  6. Turn into a serving dish, allow to cool to room temperature and serve garnished with parsley or coriander.
