CREAMED YAM OR SWEET POTATOES

11/2 lb (700 g) yams or sweet potatoes

4 oz (110 g) butter

1 medium-sized onion, grated

4 fl oz (110 ml) cream

black pepper
-
1/2 tsp nutmeg, freshly grated

Cook the potatoes unpeeled in boiling
salted water; meanwhile melt the butter and stir fry the onion over a
very low flame for 5 minutes until transparent.

Remove the potatoes' skins and mash
thoroughly with your chosen implement.

Pour the onion and melted butter into the
potatoes, add the cream and amalgamate with a wooden spoon.

Adjust the seasoning, warm through and
serve piping hot with a dusting of nutmeg.
