Creamy Gratin Potatoes

CREAMY GRATIN POTATOES

 

Serves 2-4

  • 1 lb (450 g) Pink Fir Apple or other waxy/yellow potatoes

  • 1 clove garlic

  • 2 oz (50 g) butter

  • 1/2 pt (275 ml) double cream

  • salt, pepper

  1. Rinse the potatoes thoroughly in cold water, shake them dry in a cloth.

  2. Rub a shallow earthenware dish with garlic, grease it well with butter and make layers of thinly sliced potatoes, seasoning each layer.

  3. Pour over the cream and cook for 11/2 hours at 325F/175C/gas mark 3.

  4. During the last 10 minutes turn the oven up fairly high to get a fine golden crust on the potatoes.
