Duchesse Potatoes

DUCHESSE POTATOES

Duchesse potatoes are expecially good with grilled chops but they match almost any meat of fish. Duchesse is what you should use should you ever want to pipe potato on or around something.

 

Serves 4

  • 2 lb (900 g) new potatoes

  • 2 oz (50 g) butter

  • 1/4 pt (150 ml) hot milk

  • Pinch of salt

  • Pinch of pepper

  1. Add the butter to the hot milk and beat into the potatoes.

  2. Adjust the seasoning and beat in the eggs.

  3. Butter an oven dish and either pipe or form little swids of the potato mixture.

  4. Bake for 15-20 minutes at 350F/180C/gas mark 4 until ridgesof the swirls are browned.
