EASY GRATIN POTATOES
Serves 2-6

Peel the potatoes and slice very finely
on a mandoline.

Soak in cold water.

Boil together the milk and cream, season
with salt and nutmeg.

Rub a 6 x 12 in (15 x 30.5 cm) roasting
pan with garlic and brush with clarified butter.

Drain the potatoes and dry thoroughly on
absorbent kitchen paper.

Spread the potatoes in thin, closely
packed layers adding a little creamy liquid between each layer.

The mixture should be no more than 3/1 in
(2 cm) thick.

Pour the rest of the liquid on top and
bake at 350F/180C/gas mark 4 for 30-45 minutes or until nicely browned
on top.
