FAST AND SIMPLE GRATIN POTATOES
This is a very pretty dish that taste so
delicious as well.
Serves 4-6

1.5 lb (700 g) waxy-variety potatoes

butter

2 large onions, finely sliced

4 salted Icelandic herrings, skinned and
filleted

1/2 pt (275 ml) cream
-
breadcrumbs
-
salt, pepper

Parboil the potatoes in their skins,
cool, peel and slice about 1/4 in (0.5 cm) thick.

Butter the gratin dish, put in a layer of
potatoes and then onions, season.

Arrange the top layer with diagonal
strips of fish, onion and potatoes, pour over the cream, season and
bake at 325F/170C/gas mark 3 for 30 minutes.

Remove from the oven and sprinkle with a
thin layer of breadcrumbs, return for a further 10 minutes until the
top is crisp.
