FURROWED-FIELD-EFFECT ROAST POTATOES
Serves 6
Ringing the changes with your roast potatoes needs no more than to cut
them into different shapes and sizes.

Pre-heat the oven to 375F/190C/gas mark 5
and when ready heat up a roasting tray and the dripping.

Parboil the potatoes for 5 minutes, peel
and cut them into approximately the same sized domes.

Using a small paring knife, cut lines
from the top to the bottom of the potato halves so they resemble a
cock's comb.

Paint each potato with hot fat and
'plant' on the baking tray.

Sprinkle with salt and roast for 11/2
hours.

During cooking the edges fan out and are
deliciously crisp.
