GNOCCHI WITH HERBS
Serves 4
This is another way to prepare gnocchi.

101/2 oz (290 g) floury-variety potatoes

31/2 oz (90 g) plain flour

1 egg yolk
-
2 heaped tbs green herbs such as parsley,
basil and chervil olive oil

salt, pepper, grated nutmeg

Proceed as
Potato Gnocchi recipe
but work in your chosen herbs at the same time as you incorporate the
other ingredients.

Divide up the mixture in 3/4- x 3/8-in
(1.5- x 0.9-cm) pieces and poach in well salted boiling water.

Serve with a herb-flavoured tomato sauce,
saute in a frying pan and sprinkle with Parmesan or smother in cream
and place under a preheated grill until the top is nicely browned.
