Gnocchi With Herbs

GNOCCHI WITH HERBS

 

Serves 4


This is another way to prepare gnocchi.

  • 101/2 oz (290 g) floury-variety potatoes

  • 31/2 oz (90 g) plain flour

  • 1 egg yolk

  • 2 heaped tbs green herbs such as parsley, basil and chervil olive oil

  • salt, pepper, grated nutmeg

  1. Proceed as Potato Gnocchi recipe but work in your chosen herbs at the same time as you incorporate the other ingredients.

  2. Divide up the mixture in 3/4- x 3/8-in (1.5- x 0.9-cm) pieces and poach in well salted boiling water.

  3. Serve with a herb-flavoured tomato sauce, saute in a frying pan and sprinkle with Parmesan or smother in cream and place under a preheated grill until the top is nicely browned.
