HOME-STYLE POTATOES
This dish is as familiar as the one
cooked by my mother since childhood.
Serves 4
14 oz (400g) julienne of potato, washed
and dried
11/4 oz (30 g) chicken fat, melted
11/4 oz (30 g) butter
salt, pepper
Proceed as for the
large potato straw cake but add a few finely chopped pieces of
bacon amongst the potatoes.
The addition of finely chopped garlic is
also very good.
