Selection:
No matter which variety you select, look for plump, smooth, hard tubers
that are heavy in the hand. They should be somewhat elongated, thick in
the middle, and tapering on both ends. The skins can be various colors,
from light brown to a deep russet, even purple, but should not have off
colored spots, spade cuts or bruises. The tubers should not be limp or
spongy feeling. Do not buy any that show signs of mold, especially at
the tips.
Fresh sweet potatoes are in the market year round but are at their
freshest between late September and January and are most abundant
during the winter holidays.
You will need from 1/3 to ½ pound of sweet potatoes per person, unless
they are being combined with other vegetables.
