Luxurious Potato Salad
Serves 4
This luxurious little salad relies on the very best produce; use Pink
Fir Apple, Jersey Royal or one of the French potato varieties.

1 lb (450 g) waxy-variety potatoes

2 cooked red or yellow peppers

2 oz (50 g) smoked ham, diced

1 lobster or crawfish tail, cut in rounds

1 truffle, sliced

black olives
-
2 fl oz (50 ml) olive oil

juice of 1/2 lemon

salt, pepper

Boil the potatoes in their skins, peel,
slice and cool to room temperature.

Mix all the ingredients and pour over the
olive oil, lemon juice, salt and pepper.

Serve with delicious brown bread.
