MASALA POTATOES
Serves 4

1 lb (450 g) potatoes, cubed and boiled

1 large onion, finely chopped

1 medium-sized green pepper, finely
chopped

2 tbs mustard oil
-
juice of 1 lemon

1/4 tsp each coriander powder

turmeric 1/2 tsp salt

Cook the onion and pepper in the mustard
oil over a low flame until both are soft.

Stir in the coriander, turmeric and salt.

Stir in the potatoes thoroughly and if
the mixture is too dry add 1 or 2 tbs of water.

The potatoes will by now be roughly
mashed, either leave them in this state or beat them until they make a
puree.

Stir in the lemon juice, cover and leave
to stand for 5 minutes before serving.
