MASHED POTATOES WITH CABBAGE
Serves 6-8

11/2 lb (700 g) hot mashed potatoes

4 oz (110 g) onion, celery stalks and
leaves, finely chopped

4 oz (110 g) butter
-
8 oz (225 g) cabbage, finely shredded

4 juniper berries, lightly crushed
-
4 tbs rich beef stock
-
Pinch of salt, pepper, cayenne

Saute the onion and celery in the butter
until soft.

Add the cabbage, juniper berries and
stock and cook until tender.

Add the potatoes, season and stir
thoroughly.

Serve dusted with cayenne.
