MASHED POTATOES WITH CREAM
Serves 6

2 lb (900 g) potatoes

4 oz (110 g) butter
-
1 tsp flour
-
1/2 medium-sized onion, sliced

1/2 pt (275 ml) cream

Pinch of salt, pepper, nutmeg, parsley

Boil the potatoes in salted water and
when cool remove their skins.

Chop into small pieces.

Soften the onion in some butter, then put
with the rest of the butter, flour, parsley, salt, pepper and nutmeg in
a saucepan, heat through and let it bubble up before adding the cream.

Stirring constantly, bring back to the
boil and add the potatoes.

Stir thoroughly, cover and leave for five
minutes.

Give a final stir and serve.
