MASHED POTATOES WITH EGGS

Add the yolk of an egg to a
pornrnes
puree/mash and the result is a firmer, richer version of what
went before.

The egg, whisked in at the end, gives
'body' and can thus transform a mash made with unexceptional potatoes.

However, mashed potatoes made with an egg
are generally used for something else.

The most important dish is that of
pornrnes duchesse but the combination makes wonderful
gratins and enables mash to be piped and maintain its form.
