MASHED POTATOES WITH EGGS

  • Add the yolk of an egg to a pornrnes puree/mash and the result is a firmer, richer version of what went before.

  • The egg, whisked in at the end, gives 'body' and can thus transform a mash made with unexceptional potatoes.

  • However, mashed potatoes made with an egg are generally used for something else.

  • The most important dish is that of pornrnes duchesse but the combination makes wonderful gratins and enables mash to be piped and maintain its form.
