MASHED POTATOES WITH HERBS, SPICES AND FLAVORINGS GREEN PUREE

  • Prepare the mashed potatoes as for any of the basic recipes and whisk in a further knob of butter and 4 oz (110 g) of very finely chopped parsley, chives or mint.

  • The parsley version is especially good with fish but a chive or mint puree is good with lamb.
