MASHED POTATOES WITH PINE NUTS
The addition of spices and fried nuts
transform mashed potatoes into an exotic dish.
Serves 6

2 lb (900 g) potatoes

1 large onion, coarsely chopped

2 tbs oil
-
3 oz (75 g) butter
-
3 fl oz (75 ml) milk

3 tbs pine nuts
-
1 tsp cinnamon
-
1 tbs parsley, finely chopped

a good pinch nutmeg and chili pepper
salt, pepper

Wash and boil the potatoes.

Fry the onion in oil till golden, add the
pine nuts and let them brown.

Peel and mash the potatoes, beat in
butter and milk and season with salt, pepper and spices.

Serve with the onion and pine nuts on top
and a sprinkling of parsley.
