MOCK ROAST POTATOES
Serves 4

Choose even-sized potatoes and boil them
in their skins until almost done.

Pre-heat the chip pan to 300F/150C.

When the potatoes have cooled slightly,
peel and cut into appropriate sizes.

Deep fry in 3 batches for 8 minutes or
until the potatoes are golden and look as if they've roasted.

Keep warm and sprinkle with salt before
serving.
