NEW POTATOES WITH BACON AND MINT

11/2 lb (700 g) new potatoes

8 oz (225 g) smoked, streaky bacon

4 oz (110 g) unsalted butter

Pinch of salt and pepper

4 tbs fresh mint, chopped

Choose small, even-sized potatoes and
boil them in their skins in very lightly salted water for 10 minutes.
Drain and spike each potato in a couple of places with the prongs of a
fork.

Meanwhile, cut the bacon into 1/2-in
(1-cm) dice and fry in a non-stick pan to release some of the fat.

As they begin to splutter add half the
butter and continue cooking over a moderate flame turning frequently.

Add the almost cooked potatoes and finish
cooking with the bacon to absorb the fat and flavors.

Transfer to a sewing dish, dot with the
remaining butter, season generously with pepper and sprinkle with the
mint.
