NEW POTATOES IN MUSTARD DRESSING
This new potatoes in mustard dressing recipe is particularly
good with grilled or baked gammon.
Serves 4

Scrub and boil the potatoes.

Drain and keep warm while you mix the
flour, sugar, salt, mustard and pepper in a saucepan.

Stir in the milk, then the oil and the
beaten egg.

Slowly bring to the boil, stirring
constantly, and cook for a couple of minutes.

Remove from the heat and gradually beat
in the vinegar.

Transfer the potatoes to a warmed serving
dish and pour the sauce over.
