POTATOES TO ACCOMPANY ROAST CHICKEN

Proceed as for the recipe for
Very Crisp
Roast Potatoes but 10 minutes before the end of cooking, add
4 oz (110 g) finely chopped, thinly sliced bacon and omit the second
seasoning of salt.

If you follow the method above, with the
chicken in a rack above the potatoes, remember to drain the fat
regularly or the potatoes will go soggy.
