ROCKET AND POTATO SOUP
In Italy rucola, or rocket, grows wild
and as the bulk of this soup is made from potatoes and stale bread it
is known as 'poor man's soup'. In this country rocket
is not widely available and at the moment is a fashionable salad stuff.
Cooked rucola imparts a pleasant bitter tang.
Serves 4

4 medium waxy-variety potatoes (Italian,
French or Cypriot are perfect), peeled and diced

11/4 pts (700 ml) water

2 oz (50 g) rocket leaves

31/2 oz (100 g) stale Italian or French
bread, cut up

4 tbs green, fruity olive oil

salt, pepper

Bring the potatoes to the boil in the
water.

Carefully rinse the rocket in several
changes of water to get rid of the sand.

Halfway through the cooking, after about
15 minutes, add the rocket and 2 large pinches of salt.

Cover and cook for a further 15 20
minutes, remove from the heat, add the bread and cover the pot.

Leave to stand for 10 minutes and stir in
the olive oil and a liberal sprinkling of pepper. Serve immediately.
