Saute New Potatoes

SAUTE NEW POTATOES


Serves 6

  • 2 lb (900 g) small new potatoes, scrubbed and dried

  • 2 oz (50 g) clarified butter

  • salt

  1. Heat up the butter and, when bubbling, add sufficient potatoes to cover the pan.

  2. Turn down to a low heat and leave the potatoes to cook for 15 minutes.

  3. Give the pan the odd shake and if necessary turn them over.

  4. Cook for a further 10 minutes or until they are browned all over.

  5. Sprinkle with salt before serving.
