Saute Potatoes With Parsley


Serves 4

  • 1 lb (450 g) firm-variety potatoes

  • 4 oz clarified butter or butter and oil salt, pepper

  • 3 oz parsley, finely chopped

  1. Boil the potatoes for 10 minutes, drain and peel.

  2. Cut into 1/4-in (0.5-cm) slices. Heat the butter and when hot add the potatoes.

  3. Turn down the temperature immediately and saute gently for 5 minutes on each side.

  4. They should be golden and crispy but not browned.

  5. Sprinkle with the parsley, salt and plenty of black pepper before serving.
