SHOE-STRING POTATOES

  • Scrub some waxy-variety potatoes (allowing one large potato per person) and grate them on a mandoline with their skins on.

  • Cover with water, rinse and spin dry in a lettuce spinner.

  • Plunge in batches into very hot fat (360F/185C) and cook for 2 minutes.

  • Drain, sprinkle with salt.

  • Alternatively, toss with a mixture of finely chopped thyme flowers and rosemary, salt and pepper.
