SHOE-STRING POTATOES

Scrub some waxy-variety potatoes
(allowing one large potato per person) and grate them on a mandoline
with their skins on.

Cover with water, rinse and spin dry in a
lettuce spinner.

Plunge in batches into very hot fat
(360F/185C) and cook for 2 minutes.

Drain, sprinkle with salt.

Alternatively, toss with a mixture of
finely chopped thyme flowers and rosemary, salt and pepper.
