Baked Sweet Potatoes and Apples
How to cook baked sweet potatotes? Smokey garlic sausages, grilled over
a hardwood fire, along with a big bowl of Summer Slaw, and thick slices
of pumpernickel bread will combine very well with this dish.
Makes 6 servings
1 tablespoon butter, plus additional for buttering
4 large sweet potatoes, peeled and sliced
2 medium size Golden Delicious apples, peeled, halved, cored, and
sliced
1 cup apple cider
2 tablespoons applejack or apple brandy (optional)
1/2 teaspoon ground cinnamon
1/4 cup packed dark brown sugar
Preheat the oven to 375°F.
Generously butter a 1 quart ovenproof
casserole.
In a large bowl, toss together the potato and apple sliced, and spread
them in the prepare casserole. Dot with 1 tablespoon of butter. Pour in
the cider and , if using, the applejack. Sprinkle the cinnamon on top.
Bake for 40 minutes. Spread the brown sugar on top and bake until
melted and bubbling, about 10 minutes longer.
