Baked Sweet Potatoes with Candied Butter

 

How to cook baked sweet potatoes? The candied butter should be spooned into the fluffy baked potato, with abandon if you like. It can also be the filling for tender baked apples. Serve these with roast poultry or smoke ham.


Makes 6 servings

  • 8 tablespoons (1 stick) butter, softened

  • ¼ cup packed dark brown sugar

  • 2 tablespoons bourbon

  • 1 teaspoon minced candied ginger

  • ¼ cup chopped pecans, toasted

  • 6 medium size sweet potatoes

  1. In a small bowl, beat together the butter and brown sugar until light and fluffy. Beat the bourdon. Stir in the ginger and peanut. Spoon into a small serving dish. Cover, refrigerate until firm, or overnight.

  2. Preheat the oven to 375°F.

  3. Bake the potatoes directly on the oven rack until tender, about 1 hour. Remove the potatoes from the oven. Cut an X in the top of each and push both ends inward to “blossom”, or open potato. Serve very hot, with the candied butter on the side.
