SIMPLE CREAMED SPICED POTATOES
This simple creamed spiced potatoes is an
unusual accompaniment to barbecued meat and dry curries.
Serves 4

8 oz (225 g) floury-variety potatoes

2 oz (50 g) onions, diced

large handful fresh mint leaves, finely
chopped

1 oz (25 g) butter
-
1/2 tsp lemon juice grated rind of 1/2
lemon

Pinch of salt, chilli powder

Cook the potatoes and allow to drain
thoroughly before mashing.

Mix in the onions, mint and butter, the
juice and rind of the lemon and salt.

When thoroughly mixed shape into large or
small patties, dust with chilli powder and serve hot or cold.
