SIMPLE CREAMY FRITES
This Burgundian dish is one to remember
when there is a mushroom glut or you are lucky enough to have a
successful mushroom hunt. It is best made with wild mushrooms.
Serves 6-8

Prepare the frites, following the
basic
chip recipe and keep warm. Saute the cleaned -mushrooms in
the butter and oil while you whisk together the eggs, vinegar, cream,
salt and pepper and garlic.

Put the frites in a large hot serving
dish, stir in the mushrooms and mix in the egg mixture.

It is important that everything is very
hot, so that the egg vinaigrette is very slightly cooked.
