Cumin Roast Sweet Potatoes
Try these with blackened fish of any kind, redfish if you can get it,
otherwise rive catfish will be delicious. I also like to spit-roast a
boneless pork loin that has been rolled in dried herbs, ti serve
alongside these fragrant chunks.
Makes 6 servings
3 tablespoons butter, melted
1 large clove garlic, minced
2 tablespoons minced fresh parsley
4 large sweet potatoes, peeled, and cut into 1 inch chunks
½ teaspoon ground cumin
Salt and freshly ground black pepper to taste
Preheat the oven to 350°F.
In a small bowl combine the butter, garlic, and parsley. In a large
bowl, toss the potato chunks with the butter mixture. Sprinkle with the
cumin. Spread the potatoes in a large shallow baking dish. Roast,
turning from time to time with a spatula, until golden drown and
tender, about 45 minutes. Serve this simple cooking recipes very hot,
seasoned with salt and pepper.
