SIMPLE GRATIN POTATOES
Serves 4-6

11/2 lb (700 g) potatoes

1 oz (25 g) butter

4 cloves garlic, finely chopped

1 tsp flour, sifted

7 fl oz (200 ml) double cream

3/4 pt (400 ml) milk, boiled

salt, pepper

Butter a gratin dish, rub with garlic and
then make layers of finely sliced potatoes seasoned with garlic, salt
and pepper.

Mix the sifted flour into the cream (this
stops it separating during cooking) and then mix with the milk and pour
over the gratin.

Pre-heat the oven to 400F/200C/gas mark 6
and cook for 50 minutes, then raise the temperature for 10 minutes.
