This simple mashed nut potatoes is so rich but you could not resist it.
Serves 6
2 lb (900 g) potatoes, peeled and evenly cut
1 egg, lightly beaten
4 tbs double cream
2 oz (50 g) butter
7 oz (200 g) broken walnuts
pinch sea salt
Cover the potatoes with water, add the sea salt and bring to the boil. Reduce heat and simmer until soft.
Strain well and dry over a low heat.
Mash thoroughly and add the egg, double cream and butter. Cream well and fold in the nuts.
This is extremely rich.
