Simple Mashed Nut Potatoes



This simple mashed nut potatoes is so rich but you could not resist it.


Serves 6

  • 2 lb (900 g) potatoes, peeled and evenly cut

  • 1 egg, lightly beaten

  • 4 tbs double cream

  • 2 oz (50 g) butter

  • 7 oz (200 g) broken walnuts

  • pinch sea salt

  1. Cover the potatoes with water, add the sea salt and bring to the boil. Reduce heat and simmer until soft.

  2. Strain well and dry over a low heat.

  3. Mash thoroughly and add the egg, double cream and butter. Cream well and fold in the nuts.

  4. This is extremely rich.
