Oven-Fried Sweet Potatoes
Root vegetables all seem to do very well
when roasted or oven fried. We like these alongside hamburgers,
especially ones that have a slice of blue cheese melted on top.
Makes 6 servings
6 medium size sweet potatoes, peeled and cut into sticks like French
fries
2 tablespoons olive oil
1 teaspoon ground allspice
Salt to taste
Preheat the oven to 400°F.
In a large bowl, toss the potato sticks with the oil. Spread on a large
baking sheet with sides. Sprinkle with the allspice. Bake 15 minutes.
Turn with a spatula and bake 15 minutes longer. Turn the potatoes
again. Bake until crisp outside and tender inside, 15 to 20 minutes
longer. Season with salt and serve very hot.
