Simple Potato Bhurta Recipe



The distinctiveness of this recipe comes from the mustard oil so a substitute oil won't do. You can make your own by frying some black mustard seeds in hot oil, being carefully not to burn them. It is particularly good with curries but is worth making when you fancy something fiery hot.


Serves 4-6

  • 2 lb (900 g) potatoes, boiled and mashed

  • juice of 1 lemon or lime

  • 2 green chillis, finely chopped

  • 1 medium onion, finely chopped

  • 2 tsp mustard oil

  • Pinch of salt

  1. Squeeze the lemon or lime over the chillis and onion; after 5 minutes mix in the mustard oil.

  2. Season and beat this mixture into the potatoes.

  3. Mix very thoroughly and serve hot or cold.
