SIMPLE POTATO GRATIN WITH LEEKS
Serves 4

1 lb (450 g) waxy-variety potatoes

butter
-
1 lb (450 g) leeks, washed and thinly
sliced

3 tbs parsley, chopped

1/2 pt (275 ml) chicken stock or water

salt, pepper

Slice the potatoes very finely, wash,
drain and dry in a tea towel.

Butter the gratin dish and make alternate
layers of potato and leek sprinkling each layer with parsley and
seasoning.

Finish with the potatoes, pour over the
stock, dot with butter and bake at 350F/180C/gas mark 4 for 1 hour.

This is also good with a topping of
grated Parmesan.
