SIMPLE POTATO SOUP
Serves 4

12 oz (350 g) potatoes, peeled and diced

2-3 oz (50 75 g) onion, chopped

2-3 large cloves garlic, finely chopped

2 big tbs lard or pork fat

13/4 pts (1 1) light beef or veal stock
or water parsley, chopped

salt, pepper

cubes of bread fried in lard with garlic

Cook the potatoes, onion and garlic in
the lard over a gentle heat for about 10 minutes, turning them over
occasionally. This process should not be hurried, or the vegetables
will brown and the special flavour of garlic and lard will be spoiled.

Add the stock or water and simmer until
the potato is tender. Sieve or puree in the blender. Reheat and check
the seasoning. Stir in the parsley and serve with the bread in a
separate bowl.
