SIMPLE STUFFED POTATOES WITH CURED HAM
Ordinary ham can't be substituted for this simple but moreish dish.
To fill 4 potatoes

15 minutes before the potatoes are cooked
remove them from the oven and slice off an oval lid.

Scoop out the flesh and beat in 3 oz (75
g) of the butter and enough of the milk to make a good mash.

Season well and stir in the ham.

Spoon into the potato shells, sprinkle
with breadcrumbs and dot with butter.

Return to the oven for 10 more minutes.
