Simple Stuffed Potatoes With Cured Ham

SIMPLE STUFFED POTATOES WITH CURED HAM

 

Ordinary ham can't be substituted for this simple but moreish dish.


To fill 4 potatoes

  • 4 oz (110 g) butter

  • 1/4 pt (150 ml) hot milk

  • 4 oz (110 g) piece of cured ham, finely diced

  • 2 tbs home-made bread crumbs

  • salt, pepper

  1. 15 minutes before the potatoes are cooked remove them from the oven and slice off an oval lid.

  2. Scoop out the flesh and beat in 3 oz (75 g) of the butter and enough of the milk to make a good mash.

  3. Season well and stir in the ham.

  4. Spoon into the potato shells, sprinkle with breadcrumbs and dot with butter.

  5. Return to the oven for 10 more minutes.
