Twice-Baked Sweet Potatoes
How to cook baked sweet potatoes?
3 large sweet potatoes, unpeeled, rubbed
with oil, and baked at 350°F. Until just tender, about 45 minutes.
Preheat the oven to 375°F.
Halve the potatoes lengthwise. Scoop out the insides into a medium size
bowl, leaving a shell about 1/4 inches thick. Put the inside through a
ricer or mash with a potato masher. Beat in the butter until smooth.
Stir in the sugar, egg, and rum. Season
well with salt and pepper.
Spoon the mixture into the empty shells. Arrange the filled shells in
one later in a medium size shallow baking or gratin dish. Bake until
the filling is slightly puffy and golden drown, 20 to 30 minutes. Serve
