Twice-Baked Sweet Potatoes

 

How to cook baked sweet potatoes?

3 large sweet potatoes, unpeeled, rubbed with oil, and baked at 350°F. Until just tender, about 45 minutes.

  • 1 tablespoon butter

  • 3 tablespoons packed dark brown sugar

  • 1 large egg, beaten

  • 1 tablespoon dark rum

  • Salt and freshly ground black pepper to taste

  1. Preheat the oven to 375°F.

  2. Halve the potatoes lengthwise. Scoop out the insides into a medium size bowl, leaving a shell about 1/4 inches thick. Put the inside through a ricer or mash with a potato masher. Beat in the butter until smooth.

  3. Stir in the sugar, egg, and rum. Season well with salt and pepper.
