SPANISH STEAMED POTATOES WITH CHILLI
SAUCE
This dish is fiery hot.
Serves 2-4

1 lb (450 g) new potatoes

2 dried red chilli peppers

1/2 tsp cumin seeds

1 tbs paprika
-
3 cloves garlic, crushed
-
2 tbs red wine vinegar
-
1/4 pt (150 ml) olive oil salt

Steam the potatoes in the skins while you
prepare the sauce.

Work the chillis, paprika and cumin to a
paste (either in a mortar or blender), add the garlic and salt and
gradually first the vinegar and then the olive oil.

Serve the potatoes and sauce separately.
