SPICED ROAST POTATOES
This is an exotic roast potato recipe.
Serves 6-8
6 8 large potatoes
2 tsp sunflower oil
5 bay leaves, crushed
1 tsp each turmeric, garam masala and
chili powder
1 tsp muscovado sugar
4 cloves garlic, crushed
1 pt (570 ml) natural yoghurt
Pinch of salt, pepper
2 oz (5 g) coriander leaves, chopped
Heat the oil and fry the bay leaves and
spices for a few minutes, then stir in the sugar and garlic.
Season with salt and pepper and mix into
the yoghurt.
Pre-heat the oven to 400F/200C/gas mark 6
while you parboil the potatoes for 10 minutes.
Drain, peel and prick each potato all
over.
Place the potatoes in a large shallow
ovenproof dish and pour over the yoghurt mixture, mix around and bake
for 30-40 minutes.
Serve sprinkled with coriander.
