SPICED SAUTEED POTATOES
Serves 6
2 lb (900 g) small new potatoes, scrubbed 4 tbs ghee
2 cloves garlic, crushed
2 tsp turmeric
4 tsp each coriander, black cumin seeds 4 tsp sugar
salt, pepper
chives and flat-leaf parsley, chopped
Parboil the potatoes for 5 minutes and then drain. Heat the ghee and
when it begins to bubble saute the spices and garlic for 1 minute. Add
the potatoes, stirring them around to get an even coating of spices and
sprinkle on the sugar, a little salt and pepper.
Bake for 30 minutes in a moderate oven (350F/180C/gas mark 4), turning
them twice. Serve sprinkled with the parsley and chives.
