STRAW NESTS
You will need potato nest baskets for this recipe. They look like two
wire ladles, one fits inside the other and they are clipped together.

Cut the potatoes as for making
straw
potatoes but don't rinse them in water; the starch helps to
hold them together.

Overlap the straws inside the large
'basket' and clip the smaller basket into position.

Plunge into very hot fat (360F/185C)
and cook for 4 or 5 minutes until golden brown.

Drain and remove from the mould.

Serve filled with savory tidbits;
traditionally they are filled with peas and served as an accompaniment
to chicken kiev.
