STRAW NESTS


You will need potato nest baskets for this recipe. They look like two wire ladles, one fits inside the other and they are clipped together.

  • Cut the potatoes as for making straw potatoes but don't rinse them in water; the starch helps to hold them together.

  • Overlap the straws inside the large 'basket' and clip the smaller basket into position.

  • Plunge into very hot fat (360F/185C) and cook for 4 or 5 minutes until golden brown.

  • Drain and remove from the mould.

  • Serve filled with savory tidbits; traditionally they are filled with peas and served as an accompaniment to chicken kiev.
