STRAW POTATO PANCAKES
Serves 4
These have to be made to order but are very quick to make. They are
compulsive on their own, very good with simply prepared meats and game
but are a personal favourite served under pan-fried liver with a wild
mushroom and red wine sauce.
Peel 1 potato, grate on the julienne
slicer of a mandoline and heat the oil in a non-stick pan.
When it's smoking pile in the unrinsed
potato and pat down.
Cook for 45 seconds, flip it over and
turn down the heat.
Season the cooked side and removed to
draining paper.
The finished pancakes can be stacked in a
warm oven; they will keep well enough for 4-5 minutes.
