STUFFED POTATOES WITH EGGS
To fill 4 potatoes

Cut a lid off the cooked potatoes, scoop
out the flesh and mash with the butter and cream.

Season and half frll the potatoes with
the mixture.

Make a depression in the mixture with the
back of a spoon and crack an egg into each well.

Season and if liked pipe the rest of the
potato mixture round the top.

Return to the oven for 10 minutes,
sprinkle with the cheese and brown under the grill.
