SWEET POTATO PUREE
This goes well with game but is quite
addictive on its own!
Serves 6

Bake all the potatoes in a hot oven; the
flesh should be soft after about an hour.

Cut in half and scoop out the flesh.

Press through a sieve or Mouli legume and
warm through in a saucepan.

Season and add the butter.

Stir briskly, incorporating the butter as
it melts.

Serve with an extra knob of butter.
