Sweet Potato Puree

SWEET POTATO PUREE

This goes well with game but is quite addictive on its own!

 

Serves 6

  • 2 lb (900 g) sweet potatoes

  • 2 large white potatoes

  • 4 oz (110 g) salted butter

  • Pinch of salt and pepper

  1. Bake all the potatoes in a hot oven; the flesh should be soft after about an hour.

  2. Cut in half and scoop out the flesh.

  3. Press through a sieve or Mouli legume and warm through in a saucepan.

  4. Season and add the butter.

  5. Stir briskly, incorporating the butter as it melts.

  6. Serve with an extra knob of butter.
