This is an attractive garnish with a twist. You can make Crispy Mint in the same way using 25 g (1 oz) mint leaves.
2 tablespoons groundnut oil
25 g (1 oz) basil leaves
1 small red chilli, finely sliced
Heat the oil in a wok until it is hot, add the basil and chilli and stir-fry for 1 minute until crispy.
Remove with a slotted spoon and drain on kitchen paper.
