Peas and pasta
This delicious hot dish goes well with veal, with a small grilled steak
or with grilled fish.
Makes 6 servings
3 tablespoons butter
1 bunch (6 to 8) green onions (scallions) white part and all the green
that is crisp, sliced about 1/4 inch thick
3 tablespoons chopped fresh parsley, plus additional for garnishing
1/2 teaspoons ground cumin, or more to
taste
Salt and freshly ground black pepper to taste
1/2 cup heavy cream
1 1/2 pounds fresh young peas in the pod, shelled, simmered in water to
cover until tender, about 10 minutes, and drained, or 2 cups thawed
frozen peas, prepared in the same manner
1 cup small pasta shapes, such as bow ties or elbows, cooked in salted
water until al dente, drained and kept hot
Melt the butter in a large heavy saucepan
over medium heat. Add the green onions and cook ,stirring for 1 minute.
Stir in 3 tablespoons of parsley.
Season with the cumin, slat and pepper.
Stir in the cream. Add the peas and heat through.
Stir in the pasta and toss well.
