Black-eyed Peas with Texas Relish
Sometimes a similar dish is called Texas caviar. It is a delicious way
to eat black-eyed peas. Plan to serve them with grilled steak.
Makes 6 servings
3 cups shelled fresh black-eyed peas
1 large onion, chopped
1 clove garlic, minced
1 quart water or chicken stock
Salt and freshly ground black pepper to taste
Texas Relish (recipe follow)
In a large saucepan, combine the
black-eyed peas, onion, garlic, and water.
Simmer over low heat until the peas are
tender, 30 to 60 minutes. The time will depend entirely on the
freshness of the peas.
Season well with salt and pepper.
Drain the peas and serve hot. Pass Texas Relish on the side for diners
to spoon on top.
Texas Relish

1 large tomato, peeled, seeded, and
chopped

1/2 medium size onion, minced

1 poblano or New Mexico chile, seeded and minced

1 small clove garlic, minced

1/4 cup distilled white vinegar or cider vinegar

2 tablespoons extra-virgin olive oil

Salt and freshly ground black pepper to taste
Combine all ingredients in a medium-size bowl and let stand at least 1
hour.
