How To Cook Vegetable Gado Gado

Vegetable gado gado

The rich peanut sauce is quick and easy to make in the microwave. The vegetables should be crunchy but hot, so serve them as soon as they are cooked.
 


INGREDIENTS

  • 100g (4 oz) peanuts
     

  • 30ml (2 tbsp) groundnut oil
     

  • 1 onion finely chopped
     

  • 1 clove garlic, crushed
     

  • 1 bay leaf
     

  • 5ml (1 tsp) grated fresh root ginger
     

  • 1 green chili, diced
     

  • Juice of 1 lemon
     

  • 15ml (1 tbsp) honey
     

  • 300ml (1/2 pint) boiling light stock
     

  • 15ml (1 tbsp) shoyu
     

  • Salt and black pepper
     

  • For the vegetables

  • 4 spring onions, diced
     

  • 225g (8 oz) mangetout, sliced
     

  • 100g (4 oz) mooli, diced
     

  • 2 red peppers, diced
     

  • 350g (12 oz) green beans

Method

  1. Spread out the peanuts in a shallow dish and cook for 3 mins, 600W (21/2 mins, 700W; 31/2 mins, 500W), shaking the dish halfway through. Grind to a fine powder.
     

  2. Put the oil in a medium dish and cook for 11/2 mins, 600W (1 min, 700W; 11/2 mins, 500W). Stir in the onion and garlic and cook for 1 min, 600W (30 secs, 700W; 1 min, 500W).
     

  3. Add the remaining ingredients, including the ground nuts. Season to taste with salt and pepper, and cook for 6 mins, 600W (61/2 mins, 700W; 10 mins, 500W), stirring 3-4 times.
     

  4. Prepare all the vegetables and slice them finely. Mix together in a large dish and add 30ml (2 tbsp) water. Cover and cook for 4 mins, 600W (3 mins, 700W; 5 mins, 500W). stirring once or twice.
     

  5. Pour the sauce over the vegetables and serve with brown rice, pot barley or whole meal noodles.
