Green Beans with Tarragon Butter
Enjoy these delicious beans with
pan-sauteed salmon.
Makes 6 servings
4 tablespoons (1/2 stick) butter, softened
2 tablespoons chopped fresh tarragon
1 teaspoon minced green onion (scallion)
1 teaspoon light soy sauce
1 1/2 pounds green beans, topped, tailed, strung if necessary, and
steamed until crisply tender
In a small bowl, beat together the
butter, tarragon, green onion, and soy sauce.
Toss 2 tablespoons of this prepared
butter with the hot beans.
Pass the remaining butter in a small
bowl.
Serve this simple cooking recipes very
hot.
